This coffee comes from farms in that region and goes through the Swiss Water® Process after harvest, a chemical-free decaffeination method that uses water and activated carbon filters to remove caffeine while keeping the soluble compounds that carry flavour intact. It was developed in Canada and is now used by specialty roasters who want decaf that actually tastes like coffee.\u003c\/p\u003e\n\n\u003cp\u003eThe Swiss Water® Process works by passing green (unroasted) beans through a carbon filter system that draws out caffeine molecules without the use of solvents. It removes 99.9% of caffeine and is certified organic.
