The Ethiopian half comes from the Dumerso washing station in Yirgacheffe, where sisters Mahder and Hirut Berhanu have been running operations since 2010, having reopened a station that had been closed since its construction in 1998. The smallholder farmers supplying Dumerso grow a mix of local landraces and JARC cultivars (varieties developed by Ethiopia's Jimma Agricultural Research Centre) at elevations above 1,960 meters. Coffee accounts for over 90% of local family income in the area. The Honduran half is a field blend of Parainema and IH90 varieties grown by three producers in Buena Vista, Comayagua: Lesli Inestroza, Elsie Livercita, and Dyvin Arnaldo.

At Dumerso, Hirut and Mahder bring over 20 years of hands-on production experience to the natural processing. Each cherry is handpicked for ripeness, inspected on arrival, and spread on raised beds to dry. Workers rake the cherries regularly for even drying and cover them during the hottest parts of the day and overnight to control moisture. The full drying process takes 14 to 21 days. The Honduras component follows a washed process: cherries are floated to remove underripe or damaged seeds, de-pulped the same day, then fermented dry for 30 hours in concrete tanks or shaded plastic barrels. After fermentation, the coffee is washed and dried on raised beds inside solar dryers for about 25 days.

The Honduran producers work with Semilla, a long-standing importer operating in small villages along the Montecillos mountain range in La Paz and Comayagua. In these communities, smallholder farmers often sell cherry to intermediaries at low prices, making it difficult to reinvest in their farms or cover labour costs. Semilla works directly with growers to set sustainable prices through open conversations, then connects those producers with specialty roasters worldwide so funds go straight back to the farming communities.

About Detour

Detour started in 2009 out of a back alleyway in Dundas, Ontario. The founding idea was straightforward: coffee is fun, and that should come through in every step, from sourcing to roasting to the cup. They roast on a Loring roaster, which uses convection heat to produce a clean, consistent profile, working in small batches to highlight what's already present in each coffee: origin character, variety, and process.

Their sourcing approach centres on three things: relationships with the people growing the coffee, traceability through the supply chain, and quality in the final product. Those principles guide every buying decision they make, including the long-term partnership with Semilla that brings the Honduras component of this blend to your cup.
