Their office is in Carmo do Paranaíba, in the state of Minas Gerais, and the farm team is made up of ten people. The coffee is a Red Catuai variety, grown at 1,100 meters in the Cerrado Mineiro region.\u003c\/p\u003e\n\u003cp\u003eCerrado Mineiro has a sharp dry season, which drops both humidity and temperature during the final stages of the growing period. This helps concentrate sugars in the cherry before harvest. The Barbosa family uses a natural process (the whole cherry dries around the bean rather than being removed first), which takes longer but is central to the farm's approach. A dedicated quality control team tracks the coffee at every stage, from the tree to the warehouse, under a full traceability program.\u003c\/p\u003e\n\u003cp\u003eThis coffee comes to Ethica through their partnership with green bean importer Orange Brown.
