Since then, it has moved away from synthetic inputs, relying instead on biological inputs and organic fertilizers to protect local biodiversity. The coffee is processed using the natural (dry) method, meaning the whole coffee cherry dries around the bean before it's removed. This extended contact with the fruit is what gives naturally processed coffees their fuller body and lower acidity.
