The washed process means the fruit is removed from the seed before drying, which keeps the flavour clean and lets the coffee's origin character come through without the added sweetness that natural processing brings. The three came from different backgrounds, music, health sciences, and community development, but shared an interest in making specialty coffee feel less intimidating and more accessible.\u003c\/p\u003e\n\u003cp\u003eMonogram has built long-term relationships with several producers, including Jamison Savage at Finca Deborah and the Lamastus family at Elida Estate, both in Panama. Their approach to roasting focuses on what they call the Sweet Spot, avoiding both the sharp acidity of underroasted coffee and the bitterness that comes from taking it too far.
