At Quebraditas, the Argotes give it the full treatment: deliberate soil management, strategic shade coverage, and a range of fermentation methods that include yeast inoculation (introducing a specific yeast culture to drive and control fermentation) and thermal shock processing (rapid temperature changes used to influence how the coffee cherry breaks down). For this lot, it's processed as a natural, meaning the whole cherry dries around the seed, which deepens fruit flavors before the coffee is even roasted.\u003c\/p\u003e\n\u003cp\u003eThe result is a coffee that reflects both where it grew and the choices made after harvest. They came from different backgrounds, music, health sciences, and development, but shared an interest in how coffee was grown, processed, and tasted. Their frustration with the exclusivity they saw in specialty coffee culture was part of what pushed them to start their own roastery, one focused on making quality coffee more approachable.\u003c\/p\u003e\n\u003cp\u003eOn the sourcing side, Monogram has built long-term relationships with producers including Mariana Iturralde at Finca Takesi, Jamison Savage at Finca Deborah, and the Lamastus family at Elida Estate in Panama.
