The name stuck, but the genetics tell a different story. At Quebraditas, Edinson and Luz use yeast inoculation during processing, where specific yeast strains are introduced during fermentation to guide how the coffee develops before it's dried. They also work with thermal shock processing, a technique where temperature changes are applied during fermentation to influence the final flavour. On the farming side, they focus on soil management and strategic shade coverage to support the plants before harvest even begins.\u003c\/p\u003e\n\u003cp\u003eThe combination of the Typica Mejorado variety and the yeast inoculated natural process makes this one of the more technically involved coffees in what Monogram calls their \"Super Funky Adventures\" lineup. It's a coffee where the work in the field and at the processing station are both clearly part of the result.\u003c\/p\u003e\n\n\u003ch2\u003eAbout Monogram\u003c\/h2\u003e\n\u003cp\u003eMonogram was started by Ben Put, Justin, and Jeremy, three baristas who met working together and kept finding common ground in their curiosity about coffee. They came from different backgrounds, music, health sciences, and development, but launched Monogram together out of a shared frustration with how unwelcoming specialty coffee culture felt at the time. Their first setup was a hand-built coffee cart in Calgary.\u003c\/p\u003e\n\u003cp\u003eMonogram has since developed long-term relationships with producers they return to year after year, including Jamison Savage at Finca Deborah and the Lamastus family at Elida Estate in Panama, as well as Mariana Iturralde's team at Finca Takesi.
