Guatemala's share is sourced from Carrizal, a producer in Huehuetenango farming at elevations between 1,600 and 1,900 meters on steep, mineral-rich slopes. The Ethiopian portion comes from Gigesa, a washing station in the Sidama zone that works with smallholder farmers delivering cherry from plots averaging 1 to 2 hectares each.\u003c\/p\u003e\n\n\u003cp\u003eThe blend combines both natural and washed processing. In natural processing, coffee cherries are dried whole with the fruit intact, which draws sugars into the bean over several weeks. Washed processing removes the fruit before drying, which tends to produce a cleaner cup. Using both methods across the three origins gives the blend a layered character without leaning too far in one direction. No6 works exclusively with specialty importers who track moisture content and water activity at origin and on arrival, and store green coffee in sealed GrainPro bags under controlled humidity before roasting.\u003c\/p\u003e\n\n\u003cp\u003eThe 40\/30\/30 split between Brazil, Guatemala, and Ethiopia was designed to work both as a straight black espresso and with milk. The roastery was built around the idea that good relationships across the supply chain, between importers, producers, and farmers, are what separate consistently good coffee from inconsistent commodity buying. They work with importers who maintain long-term direct relationships with the farms they source from, and they pay above fair-trade premiums to encourage producers to keep improving quality at the farm level.\u003c\/p\u003e\n\n\u003cp\u003eEvery coffee they buy is traceable back to a specific farm or cooperative.
