After picking, they transport their cherries directly to Testi Coffee's Nensebo washing station, where processing begins the same day.\u003c\/p\u003e\n\u003cp\u003eAt the washing station, incoming cherries are floated in water to remove any low-density defects before being moved to raised drying beds. Workers rotate the cherries regularly for even drying and sort out any underripe fruit by hand throughout the process. The natural process (where the whole cherry dries around the bean) takes 15 to 18 days depending on weather conditions. The coffee is imported to Canada through Common Goal, an importer focused on building long-term relationships with producers at origin.\u003c\/p\u003e\n\n\u003ch2\u003eAbout No6 Coffee Co.\u003c\/h2\u003e\n\u003cp\u003eNo6 Coffee Co. was founded in Nelson, British Columbia in 2015. They operate as a boutique roastery and tasting bar, with a focus on sourcing from importers who maintain ongoing direct relationships with small farms and cooperatives rather than buying through commodity channels. Farmers are paid above fair trade premiums, which No6 sees as directly tied to continued quality improvement at the farm level.\u003c\/p\u003e\n\u003cp\u003eThey roast in small batches weekly and store green coffee in sealed GrainPro bags in a controlled, low-humidity environment.
