Farms here are small, often under two hectares, and sit on steep terrain between 1,500 and 2,300 meters above sea level. The volcanic soils and high altitude slow down cherry maturation, which gives the coffee more time to develop. Farmers grow traditional varieties like Caturra and Castillo, hand-picking and handling most of the initial processing themselves before connecting to cooperative networks that help them reach specialty buyers.

After harvest, each farmer ferments their coffee on-farm for 24 hours using a mucilage fermentation (where the fruit skin is removed but a layer of sticky fruit pulp remains during fermentation), then delivers it to a shared solar drying facility. Drying the lots together under the same conditions creates a more consistent cup from one batch to the next. Once dried, the coffee rests in GrainPro bags (sealed, oxygen-limiting bags that protect against moisture and pests) for 125 days before milling. That extended stabilization period lets the flavors settle and integrate rather than rushing the coffee to market.

Nariño has a history of isolation that kept its farmers out of specialty markets for a long time. Recognition through programs like the Colombia Cup of Excellence changed that. Many of these producers still balance coffee with other crops, running diversified small farms rather than depending on a single commodity.

About Rosso

Rosso has been roasting coffee for 16 years, based in Calgary, Alberta. They built their approach around sourcing relationships and pushing on what Colombian and other origin coffees can do when handled carefully from farm to roast.

Their sourcing philosophy puts a premium on producer partnerships and traceability, working with growers who are doing something specific and repeatable rather than buying coffee by region or grade alone.

//cdn.shopify.com/s/files/1/0677/2880/1852/files/R_26-SO-PL-mock_bc5b6365-2b5a-4abc-8606-8e636aa568cf.png?v=1781806730
