The whole cherries were first fermented in a hopper for 60 hours. They were then de-pulped and fermented dry for another 40 hours. After fermentation, the coffee was spread on raised beds inside a parabolic greenhouse-style dryer and dried for 15 to 20 days. The double fermentation step gives the microbes more time to interact with the coffee, which tends to increase complexity in the final cup. Subtext purchased the entire 140 kg lot, imported through Osito, and scored it 87.5 on their cupping scale. They paid $10.75 USD per pound.\u003c\/p\u003e\n\u003cp\u003ePink Bourbon has become a popular variety across Huila because it produces well at high elevations and has distinctive flavor characteristics tied to its Ethiopian landrace genetics. It was originally thought to be a natural hybrid of red and yellow bourbon, but genetic testing has since confirmed it is not. Sidra, also grown at Villa Sofia, is similarly traced to Ethiopian landrace genetics through testing by World Coffee Research. Gesha, the third variety on the farm, drew serious attention in 2005 when it won the Best of Panama competition and has since become one of the most closely watched varieties at auction globally.\u003c\/p\u003e\n\n\u003ch2\u003eAbout Subtext\u003c\/h2\u003e\n\u003cp\u003eSubtext is a roastery based in Toronto, roasting out of an industrial space at 130 Cawthra Ave in the city's west end. Their sourcing philosophy centers on transparency: every bag carries the producer's name, they publish what they paid for each coffee, and they work with importers they vet specifically for shared values around fair pricing and producer relationships. They don't blend coffees or roast dark, which they see as practices that obscure where a coffee comes from and who grew it.\u003c\/p\u003e\n\u003cp\u003eOn the roasting side, Subtext uses colorimeters and refractometers to measure roast development and solubility, tasting profiles blind against what they consider the best comparable coffees from similar regions and varieties. Their goal is to preserve origin character rather than add roast flavor, which means the green coffee quality has to do most of the work.
