The area has become known for producing coffees with a lot of body and fruit clarity, thanks to a combination of high altitude, cool nights, and well-established washing station infrastructure.\u003c\/p\u003e\n\n\u003cp\u003eThe second half of this blend comes from Jairo Arcila, one of Colombia's better-known specialty producers. Arcila farms in the Quindío region at around 1,730 meters and has built a reputation for experimental processing. His contribution here is a honey co-ferment (a process where the coffee cherry is partially depulped, leaving some of the fruit mucilage on the bean, then fermented with added fruit — in this case, peach — to layer in additional flavor before drying). The Pink Bourbon and Paraneima varietals used across this blend are both known for their natural sweetness and intensity, which makes them well-suited to processing methods like this one.\u003c\/p\u003e\n\n\u003cp\u003eTraffic blended these two coffees deliberately. Co-ferments can read as loud or one-dimensional on their own.
