The Colombian component is a Pink Bourbon, a varietal known for its delicate structure, while the Ethiopian lots use the 74110 variety, a selection developed by the Jimma Agricultural Research Center in the 1970s and widely grown across Ethiopia's producing regions.\u003c\/p\u003e\n\u003cp\u003eWhat makes this blend unusual is the processing on the Colombian side. Jairo Arcila's Pink Bourbon was processed using co-fermentation, where dried rose petals are introduced during fermentation to influence the final cup. Honey processing (where some of the fruit mucilage is left on the seed during drying) was also used across the blend.
