Swiss Water® Decaf

About the Coffee

Acatenango is one of Guatemala's higher-growing regions, sitting above 2,000 meters in many parts, with volcanic soil and cool temperatures that slow cherry development and concentrate sugars. This coffee comes from farms in that region and goes through the Swiss Water® Process after harvest, a chemical-free decaffeination method that uses water and activated carbon filters to remove caffeine while keeping the soluble compounds that carry flavour intact. It was developed in Canada and is now used by specialty roasters who want decaf that actually tastes like coffee.

The Swiss Water® Process works by passing green (unroasted) beans through a carbon filter system that draws out caffeine molecules without the use of solvents. It removes 99.9% of caffeine and is certified organic. The result holds up better through roasting than solvent-based decaf methods, which is part of why specialty roasters tend to favour it when they want decaf worth putting on the menu.
