About the Coffee

Neptaly Santos Correa and his wife Liliana Heredia farm 5 hectares in Caserio Shimania, a small community of around 60 people in the San Ignacio district of Cajamarca, northern Peru. Three of those hectares are planted with coffee at 1,700 to 1,800 meters. Neptaly is a cooperative leader in the area and has trained under the head of the coffee program in the Chirinos coffee sector. Liliana is active in the women's program at Pawquara.

The farm grows several varieties including Caturra, Bourbon, Pache, Gesha, and Wush Wush, all processed using the washed method. Life in Caserio Shimania runs on "mingas," a tradition of shared work where neighbors, friends, and family pool their labor to improve coffee quality across the community. It's less a business model and more just how things get done there.

About Detour

Detour started in 2009 out of a back alleyway in Dundas, Ontario. Their sourcing approach comes down to three things: relationships with the people growing the coffee, traceability through the process, and quality in the final product.

Roasting happens in small batches on a Loring Coffee Roaster, which uses convection heat to produce a clean, even roast. The goal is straightforward: bring out what's already in the coffee, whether that's sweetness, acidity, or texture, rather than imposing a house style on top of it.
