Boundless is a blend built around versatility. Eclipse designed it to work across brewing methods, whether you're pulling espresso, running it through a filter, or adding milk. The name reflects the intent: one coffee that doesn't ask you to choose a single way to drink it.

Eclipse recommends letting the coffee rest about 10 days from the roast date before brewing. This is standard practice with freshly roasted coffee, which releases CO2 in the days after roasting. Giving it time to degas helps it brew more evenly and consistently, regardless of your method.

About Eclipse

Eclipse Coffee Roasters was founded in 2014 in Canmore, Alberta. From the start, the goal was to source and roast coffee that works for a range of tastes, from lighter African single origins to bolder blends, without cutting corners on quality. They roast to order, so coffee ships fresh rather than sitting in a warehouse.

On the sourcing side, Eclipse puts each coffee through an independent screening process to verify it's grown in both environmentally and socially responsible conditions. For farms that meet their standards, they pay above market price, which they say goes back into farm development and support for local communities.
