About the Coffee

Dani Ricardo Gómez grew up in El Tabor, Colombia, where his mother supported four children as a single parent by picking coffee on other people's farms. They had no land of their own for years, and Dani was working alongside her from childhood. By ninth grade, he left school to focus on work full-time. At 17, he and his brother Carlos began farming a small plot part-time, saving money over four years growing beans before Dani had enough to think about coffee of his own. In 2019, his father-in-law Don Carlos gave Dani and his wife Luisa a plot in La Ermita, San Agustin, at 1,770 meters above sea level, to farm for themselves.

They started with yellow Caturra and shifted to Pink Bourbon, a variety that handles the cold at that altitude and has strong potential for specialty grades. Dani connected with the MonKaaba project through a neighbor and brought in his first sample, which was blended and sold as part of a "Las Nubes" lot. He used the experience to learn, attending cupping sessions to identify fermentation and cultivation issues. His most recent harvest marked a milestone: his first batch sold under his own name, Buena Vista.

The processing on this coffee is deliberate and layered. Cherries are picked every three weeks, giving the plants two weeks of rest between harvests. The first day's picking ferments in a wooden hopper for 24 hours before the second day's picking is added and both are depulped together. The depulped coffee then undergoes a dry fermentation (no water) in ceramic tanks for 36 hours, followed by a wet fermentation for another 12 hours once water is added. After rinsing, the coffee drains for an hour before going to raised drying beds for 12 to 15 days.

Eclipse Coffee Roasters was founded in 2014 in Canmore, Alberta. The roastery was built around sourcing single origin coffees directly from farms and roasting to highlight what's naturally in each bean, from light and fruit-forward to fuller and rounder profiles.

Eclipse screens every coffee it sources for environmental and social responsibility, and pays above market price to farms it works with. The goal is to support producers in developing their coffees long-term, not just purchase a one-time lot.
