About the Coffee
São Pedro farm, which includes the Eldorado estate, has been growing coffee in Brazil's Alta Mogiana region of Minas Gerais across multiple generations. Today, the Eldorado estate is run by Maria Lucia and Laece França Faleiros. The farm grows Yellow Catuai, a high-yielding Arabica variety, at elevations between 900 and 1,200 meters.
The farm shifted its focus to specialty coffee in 2010. Since then, it has moved away from synthetic inputs, relying instead on biological inputs and organic fertilizers to protect local biodiversity. The coffee is processed using the natural (dry) method, meaning the whole coffee cherry dries around the bean before it's removed. This extended contact with the fruit is what gives naturally processed coffees their fuller body and lower acidity. São Pedro has won awards for its quality since making the switch to specialty production.
About Hale
Hale Coffee started in Toronto, with early roots on Queen and Spadina before moving to The Junction Triangle. The roaster built its sourcing around direct trade relationships with farmers, with the goal of ensuring producers are paid fairly for their work.
Hale focuses on Brazilian coffees and others sourced through those direct relationships, keeping quality control tied closely to how and where beans are grown.
