About the Coffee
Waykan is sourced from smallholder producers across four communities in Huehuetenango, Guatemala: Chajul, Quiche, Cotzal, and Nebaj. Huehuetenango is one of Guatemala's most established coffee-growing regions, with around 80% of the local population involved in production. The name Waykan comes from the Maya Q'anjob'al dialect and means "star that shines in the sky at night." Coffees are grown between 1,200 and 1,800 meters, primarily in Typica and Paches varieties.
Lots are selected through repeated cuppings, scored against a consistent quality threshold. Coffees scoring 85 to 86 points are blended into Regional Select lots, while those scoring 87 and above are separated and sold as microlots. This scoring-based approach means producers have a direct incentive to improve quality, since higher-scoring lots earn a premium price.
About Hale
Hale Coffee is an independent roaster based in Toronto's Junction Triangle neighbourhood, having started out on Queen and Spadina before relocating to their current space. Their sourcing model is built around direct trade relationships with producers, which they use to ensure farmers are paid fairly for their work.
Hale focuses specifically on specialty coffee and sources from farms across multiple growing regions. The Waykan Guatemala is part of their ongoing commitment to coffees that represent their place of origin honestly, selected to reflect the character of Huehuetenango's high-altitude growing conditions.
