Blackout is Hatch's boldest offering, a blend built for filter and espresso drinkers who want something with real weight to it. It sits alongside three other core coffees in Hatch's lineup, each built around a distinct profile. Blackout is the one for people who want their coffee to mean business.

The product page doesn't go into detail about the specific origins or producers in this blend, so we can't trace it back to a single farm or cooperative. What Hatch does share is that Blackout is positioned as a throwback to classic coffee, done with intention. It's not a light, bright roast chasing fruit notes. It's built around depth and body, the kind of cup that holds up in milk or works just as well straight.

Hatch rests this coffee for 7 to 10 days before shipping it. That's not unusual for a well-roasted espresso blend. Fresh-off-the-roaster coffee releases a lot of CO2, which gets in the way of even extraction. Letting it rest means the coffee you brew at home is actually ready to be brewed.

About Hatch

Hatch is based in Markham, Ontario. The founder started roasting coffee by hand while living in West Africa, which is an unusual origin story for a Canadian roaster. That background stuck. When Hatch moved into its roastery and brewery in Markham, it did so with a clear emphasis on quality, experimentation, and doing things its own way rather than following a template.

Hatch runs three roasting machines, including two Loring roasters and a Stronghold S9X, and employs seven active Q-Graders (licensed professionals who evaluate coffee quality through a standardized sensory exam). That's a meaningful investment in quality control for a roaster of their size, and it shows up in how consistently their coffees are received. They won Roaster of the Year at the Th3rd Wave Coffee Awards in 2022.
