About the Coffee

Gamma is Hatch's take on a classic espresso blend, built around two origins: Central America and Ethiopia. Blending these two regions isn't new, but the reasoning behind it is worth knowing. Central American coffees tend to bring structure and body, while Ethiopian coffees add brightness and floral character. Together, they cover a wider range than either origin could alone.

The roast level sits in a middle zone by intention. Hatch takes the blend far enough to develop caramel and chocolate depth, but stops before the roast starts to dominate the cup. The goal is a blend that works well as a straight shot or with milk, without either direction feeling like a compromise.

Gamma sits alongside three other core coffees in Hatch's lineup, each aimed at a different kind of drinker. It's the one built for people who like espresso that feels familiar but isn't flat.

About Hatch

Hatch was founded by someone who started roasting coffee by hand while living in West Africa, long before there was a company around it. That hands-on start carried forward when they set up their roastery and brewery in Markham, Ontario, eventually building out a full production facility with Loring 35kg and 70kg roasters alongside a Stronghold S9X, and a fully automated bagging line added in 2023. They hold HACCP certification and keep seven active Q-Graders on staff, which is a meaningful number for a roaster of any size.

Hatch has picked up Roaster of the Year from Th3rd Wave Coffee in 2022 and a Coffee Collection Innovation award in 2023. They describe themselves as still operating with a startup mindset, focused on quality, innovation, and experimentation. Cold brew was their first product by design, because they expected it to take the longest to catch on. They were right, and they stuck with it.
