About the Coffee

Quebraditas is run by Edinson and Luz Argote, a husband-and-wife team based in Colombia who took over the farm in 2018. Since then, they've built their operation around a combination of careful farming and hands-on processing experimentation, developing a reputation for producing some of the more technically ambitious lots coming out of Colombia right now.

This coffee features Typica Mejorado, a variety that sounds like a descendant of Typica but is actually a naturally occurring hybrid of Bourbon and Ethiopian Landrace. It's become one of the more sought-after varieties in specialty coffee for its floral character and layered fruit profile. At Quebraditas, the Argotes give it the full treatment: deliberate soil management, strategic shade coverage, and a range of fermentation methods that include yeast inoculation (introducing a specific yeast culture to drive and control fermentation) and thermal shock processing (rapid temperature changes used to influence how the coffee cherry breaks down). For this lot, it's processed as a natural, meaning the whole cherry dries around the seed, which deepens fruit flavors before the coffee is even roasted.

The result is a coffee that reflects both where it grew and the choices made after harvest. The Argotes are working with rare varieties and pushing fermentation in directions that most farms aren't, and this lot is a good example of what that looks like in the cup.

About Monogram

Monogram was started by Ben, Justin, and Jeremy, three baristas who met while working together in the early days of Canadian specialty coffee. They came from different backgrounds, music, health sciences, and development, but shared an interest in how coffee was grown, processed, and tasted. Their frustration with the exclusivity they saw in specialty coffee culture was part of what pushed them to start their own roastery, one focused on making quality coffee more approachable.

On the sourcing side, Monogram has built long-term relationships with producers including Mariana Iturralde at Finca Takesi, Jamison Savage at Finca Deborah, and the Lamastus family at Elida Estate in Panama. Ben Put, one of the founders, has won the Canadian National Barista Championship seven times and placed third at the 2025 World Barista Championship, which says something about how seriously the team takes the coffee they put out.
