About the Coffee

Full City is a blend of two origins: 60% from Santa Helena in Brazil and 40% from Carrizal in Guatemala. Both farms sit at elevations suited to slow cherry development, which tends to concentrate sugars and produce a more stable, consistent cup. The blend is built for espresso, but works just as well through a batch brewer.

No6 sources exclusively through specialty importers who handle green coffee in GrainPro bags and track moisture levels and water activity from origin through arrival. Each importer works directly with the farms they buy from, which gives No6 visibility into how the coffee was dried, stored, and handled before it reaches the roastery. Lots are evaluated through cupping before purchase, and any coffee showing signs of quality issues gets cut before it moves forward.

The Full City roast is designed to be reliable and repeatable. No6 describes it as a workhorse: something a cafe can pull day after day without fussing over variables, and something a home espresso user can dial in without much trouble. Roasting happens weekly in small batches, with orders going out on Wednesdays to keep coffee as fresh as possible when it arrives.

No6 Coffee Co. started in 2015 in Nelson, British Columbia. The roastery operates as both a roasting operation and a tasting bar, with a focus on making specialty coffee approachable for people who want to learn more about what they're drinking.

Their sourcing runs through independent importers who maintain long-term relationships with small farms and cooperatives. No6 pays above fair trade premiums across their lineup, and the price variation across their single origin offerings reflects differences in what was paid at origin. Green coffee is stored in sealed GrainPro bags in a low-humidity environment, and roasted in small batches each week.
