About the Coffee

The Rabbit Hole is a 50/50 blend of two coffees: one from Cauca Sotara in Colombia, and one from Finca Pradera in Nicaragua. Cauca Sotara sits in southwestern Colombia, where farms typically run between 1,800 and 2,200 meters. Finca Pradera is a single estate in Nicaragua's northern highlands, grown at elevations around 1,200 to 1,500 meters. Putting the two together gives the blend a balance that neither origin would hit on its own.

No6 sources both components through independent specialty importers who work directly with small farms and cooperatives. Green coffee is sealed in GrainPro bags at origin to protect moisture levels during transit, then stored under controlled conditions at the roastery before being roasted in small batches. The blend is designed to work across brewing methods, from pour-over and French press to espresso, without needing to dial in dramatically differently for each.

About No6 Coffee Co.

No6 Coffee Co. was founded in 2015 in Nelson, British Columbia. The roastery operates out of a tasting bar in Nelson's town center, where the focus is on sourcing traceable, specialty-grade coffee from small farms and cooperatives through importers with long-standing direct relationships at origin. Farmers receive premiums above fair trade rates, which No6 sees as a direct link between what's paid and the quality of what ends up in the bag.

No6 roasts weekly in small batches and has run a reusable jar and container program since opening, keeping single-use packaging out of the supply chain wherever possible. Their green coffee is stored in sealed GrainPro bags in a low-humidity environment, and lots are evaluated through standard cupping protocols before roasting.
