About the Coffee
The Salgar Coffee Growers Cooperative, known as Cocafisa, was founded in 1965 by 34 producers in the mountains of southwestern Antioquia, Colombia. Their goal was straightforward: work together to stabilize prices and protect their incomes. Today the cooperative represents nearly 3,000 smallholder farmers growing Castillo and Caturra varieties at 1,100 to 1,300 meters across the steep slopes and river-cut valleys of this region.
Cocafisa operates around eight stated values: honesty, transparency, solidarity, responsibility, trust, empowerment, and commitment. These aren't just words on a wall. They shape how the cooperative handles pricing, quality oversight, and long-term planning for its members. The coffee is fully traceable from farm to export and imported into Canada through Common Goal Coffee, which works on direct, ongoing relationships with producers at origin.
This particular lot has been decaffeinated using the Swiss Water Process. Unlike chemical solvent methods, Swiss Water uses water and activated carbon filters to remove caffeine while keeping the coffee's natural compounds intact. The process removes 99.9% of caffeine and doesn't introduce any foreign substances into the bean. It's the cleanest way to decaffeinate coffee, and it shows in the cup.

No6 Coffee Co. was founded in 2015 in Nelson, British Columbia. The roastery operates as a boutique operation focused on sourcing specialty-grade coffees from small farms and cooperatives through independent importers who maintain direct, long-term relationships with producers.
No6 sources exclusively through importers they trust, with quality control built into each step of the supply chain. Green coffee is stored in sealed GrainPro bags in a controlled, low-humidity environment and roasted in small batches. Their sourcing pays above fair trade premiums, which they see as necessary for producers to keep improving their farms and communities over time.
