About the Coffee

Natalia Brito farms Yellow Bourbon coffee at Fazenda Jaguara in the Campo das Vertentes region of Minas Gerais, Brazil. The farm sits at elevations typical of this high-altitude zone in the state's southern highlands, where cooler temperatures slow the cherry's development and concentrate sugars before harvest. Yellow Bourbon is an older variety that was largely displaced by higher-yielding cultivars across Brazil, but producers like Brito have held onto it for the quality it produces at altitude.

This lot is processed naturally, meaning the whole coffee cherry is dried with the fruit still intact around the seed. The cherries are spread on raised drying beds and turned regularly over several weeks until they reach the right moisture level. It's a slower process than washed processing, and it requires careful attention to prevent uneven drying or fermentation going off course. Done well, it draws out sweetness from the fruit and into the bean.

Pallet Coffee Roasters was founded in East Vancouver in late 2014 with a focus on making specialty coffee accessible to the broader community, not just people already deep into coffee culture. The roastery is locally owned and has stayed rooted in Vancouver since the beginning.

Pallet builds long-term relationships with the farmers and producers they source from, working with partners who share a focus on sustainable and ethical growing practices. The idea is straightforward: knowing who grew the coffee and how it was grown leads to better buying decisions and more consistent quality in the cup.
