About the Coffee
Daily Driver is a seasonal blend built around two naturals: one from Brazil, one from Ethiopia. Pallet rotates the specific lots that make up this blend throughout the year, keeping the flavor profile consistent while sourcing from whatever Brazil and Ethiopia lots are performing best at a given time. That means the farms behind the coffee shift, but the approach stays the same: natural processing from both origins.
Natural processing means the coffee cherries are dried whole, with the fruit still intact around the bean. This is done on raised drying beds or patios over several weeks, and the contact between the fruit and the seed during drying is what drives the richer, fruit-forward character naturals are known for. Both Brazil and Ethiopia have long histories with this method. In Ethiopia, where coffee originates, natural processing is traditional in many regions. In Brazil, the dry climate and scale of production makes it a practical and widely used approach.
Blending these two origins gives Pallet something to work with: the body and chocolate depth that Brazilian naturals tend to offer alongside the floral and berry notes Ethiopia brings. The blend is positioned as a darker, bolder roast, sitting in what Pallet calls a "New Traditional" profile.
About Pallet Coffee Roasters
Pallet Coffee Roasters was established in East Vancouver in late 2014 with a straightforward goal: make good specialty coffee accessible to the people around them. They're locally owned and have grown steadily within the Vancouver community since opening.
Pallet puts a focus on long-term relationships with the farmers and producers they source from. Rather than buying coffee at arm's length, they work directly with partners who align on sustainable and ethical production. Those relationships are meant to be ongoing, not transactional.
