About the Coffee

Early Riser is a seasonal blend built from three origins: Ethiopia, Colombia, and Brazil. Each lot is processed separately before blending, with the Ethiopian and Brazilian components processed naturally (where the coffee cherry dries with the fruit still on, concentrating sweetness) and the Colombian component washed (where the fruit is removed before drying, producing a cleaner, more consistent base). Blending across processing methods is a deliberate choice, not a shortcut. Each component is selected to do a specific job in the cup.

Pallet describes Early Riser as sitting in a "New Traditional" profile, which means it leans toward the bolder, darker end of specialty coffee without crossing into the roasty, bitter territory of conventional dark roasts. The blend is designed to hold up well with milk and work across different brewing methods, making it a practical everyday option rather than a single-use filter coffee.

Because Early Riser is a seasonal blend, the specific farms and producers shift over time as Pallet adjusts the recipe to maintain consistency across harvests. The blend format is common among roasters who want to offer something reliable year-round without locking into a single-origin lot that may not always be available.

About Pallet Coffee Roasters

Pallet was founded in East Vancouver in late 2014 with a straightforward goal: make good specialty coffee accessible to the broader community, not just people already deep into coffee culture. The roastery is locally owned and based in Vancouver.

Their sourcing is built around long-term relationships with farmers and producers. Rather than buying opportunistically on the spot market, Pallet works with the same partners across harvests, which gives them more consistency in what they're buying and more accountability to the people growing it.
