About the Coffee
This espresso comes from the Cauca region of Colombia, one of the country's most respected coffee-growing areas. Cauca sits in the southwestern Andes, where farms typically sit between 1,700 and 2,000 meters. At that altitude, coffee cherries ripen slowly, which tends to concentrate sugars and build more complexity in the bean before harvest.
The coffee is washed processed, which means the fruit skin and pulp are removed from the cherry shortly after picking, before the beans are fermented in water tanks and then dried. Washed coffees from Cauca are known for their clean, well-defined character. Smallholder farmers in this region typically work plots of 1 to 3 hectares, hand-picking cherries selectively to bring in only ripe fruit. That kind of selective harvesting takes more time than strip-picking an entire branch at once, but it makes a real difference in what ends up in the bag.
Pallet sources this as their seasonal espresso offering under the Manifesto name, meaning the specific producer or lot may shift as Pallet finds coffees that meet the profile they're looking for. The washed process and Cauca origin stay consistent as anchors for the blend's character.
