About the Coffee
Fundo Sudetia Del Sur is a farm in Villa Rica, a coffee-growing region in the Pasco department of central Peru, sitting at elevations between 1,400 and 1,800 meters. Villa Rica has a long history with coffee, dating back to the late 19th century when European settlers first planted it there, and the region's high altitude and consistent rainfall make it well suited to growing Caturra and Red Bourbon varieties like the ones used here.
This coffee is washed processed, meaning the fruit is removed from the coffee seed before it dries. The beans are pulped, then fermented in water tanks to break down any remaining fruit, then washed clean and dried on raised beds or patios. Washed processing puts the focus squarely on the green coffee itself rather than the fruit it grew inside, which is why coffees from careful washed lots like this one tend to be clean and well-defined in the cup.
Caturra and Red Bourbon are both older, traditional varieties that have largely been replaced in other regions by higher-yielding hybrids. They're harder to grow and produce less fruit per plant, but farmers in Villa Rica have continued cultivating them because of the cup quality they deliver at altitude.

Pallet's sourcing is built around long-term relationships with farmers and producers. Rather than buying opportunistically, they work with the same partners over time, which gives them more visibility into how the coffee is grown and processed before it reaches the roaster.
