About the Coffee

The Kunjin region sits in the highlands of Papua New Guinea, where smallholder farmers grow Arusha, Bourbon, and Typica varieties at high elevations. Coffee farming in this part of PNG has long been a community effort, with families tending small plots and delivering cherry to local washing stations for processing.

This lot is washed, meaning the fruit is removed from the coffee seed before it dries. That method tends to produce a cleaner, more consistent cup and lets the character of the bean come through without the influence of fermentation from the fruit. The Arusha, Bourbon, and Typica varieties grown here are older, lower-yielding trees, but they're known for producing well-defined, complex coffee when farmed carefully at altitude.

About Pallet Coffee Roasters

Pallet Coffee Roasters was founded in East Vancouver in late 2014 with a straightforward goal: make good specialty coffee available to everyone in the neighbourhood, not just people already deep into coffee culture. They're locally owned and have stayed rooted in the Vancouver community since the start.

Their sourcing is built around long-term relationships with farmers and producers. Rather than chasing single lots on the open market, Pallet works with partners they trust over time, which gives them more visibility into how coffee is grown and processed before it reaches the roastery.
