About the Coffee

Brazil's Sul de Minas region sits in the southern part of Minas Gerais state, one of the country's most established coffee-growing areas. Farms here sit between 900 and 1,200 meters, with a dry season that lines up well with harvest, making it easier to dry coffee consistently and predictably. The region has been producing coffee for generations, and Yellow Bourbon is one of the varieties that put it on the map.

Yellow Bourbon is a naturally occurring mutation of the Bourbon variety, named for the yellow color the cherries turn when fully ripe rather than the usual red. It tends to ripen a bit earlier in the season and requires careful attention at harvest to pick at the right moment. The yellow color can make it harder to judge ripeness by sight alone, so producers who grow it well have usually been working with it for years and know their trees closely.

Roasti is based out of Sherwood Park, Alberta, operating from a roastery and coffee bar on Brentwood Boulevard. They roast and serve out of the same space, which keeps the distance between roasting and brewing short.
