About the Coffee

This coffee comes from smallholder farmers in Caldas, Colombia, growing at 1,800 meters above sea level. The region's stable mountain climate, fertile soils, and access to clean water make it well-suited for producing clean, consistent coffee. The farms grow Caturra, Colombia, and Castillo varieties, all processed as washed coffees before decaffeination.

Decaffeination is handled by Descafecol, a Colombian processor that has been working in this space for over 30 years. They use an Ethyl Acetate (EA) process, where the solvent is derived from fermented local sugarcane rather than synthetic sources. The green coffee is soaked in spring water to draw out caffeine, then the EA binds to the caffeine and removes it. Because EA is naturally selective for caffeine, the process leaves most of the coffee's original compounds intact. The beans are then steamed to remove any remaining traces before drying.

Keeping decaffeination within Colombia means shorter supply chains between the farms and the processing facility, and Descafecol's long track record gives roasters a reliable, consistent product to work with. This is a washed decaf that holds its structure well through roasting.
