About the Coffee
This coffee comes from Sul de Minas, one of Brazil's most established coffee-growing regions in the state of Minas Gerais. The region sits at elevations ranging from 700 to 1,100 meters and has been producing coffee commercially for well over a century. The Yellow Bourbon variety grown here is a naturally occurring mutation of the Red Bourbon plant, selected over generations for its adaptability to Brazilian conditions and its reliable, consistent cup.
Yellow Bourbon trees tend to ripen later in the harvest season than other varieties, which gives the cherries more time to develop sugars on the branch. Farms in Sul de Minas are typically family-run operations working relatively flat terrain compared to steeper regions in Central America, which allows for more mechanized harvesting. The area's distinct dry season makes it well-suited to natural and pulped natural processing methods, where the fruit is dried on the coffee seed before milling.
Roasti sources this as a direct trade coffee, meaning they work directly with producers in the region rather than through a commodity broker. This approach gives them more control over sourcing consistency and lets them build longer-term relationships with the farms they buy from.
