About the Coffee

Daydream is a rotating blend that currently combines two coffees: a washed Ethiopia Limmu and a natural Colombia El Indio. Limmu is a well-known growing region in southwestern Ethiopia, one of the older coffee-producing areas in the country, with farms typically sitting between 1,700 and 2,000 meters. El Indio is a farm in Colombia, though Rosso's product page doesn't go deeper on the producer details beyond the name.

The two coffees are processed differently, which is part of what makes the blend work. The Ethiopia is washed, meaning the fruit is removed from the coffee cherry before drying, which tends to produce a cleaner, more defined cup. The Colombia is natural-processed, where the whole cherry dries around the seed for several weeks before milling, which draws more sweetness and fruit character into the bean. Blending washed and natural coffees is a common way to layer complexity without pushing either quality too far.

Because Daydream is a rotating blend, the specific coffees inside it change over time. Rosso updates the components when sourcing shifts, so what's in the bag today reflects what they found worth buying this season. The Ethiopia Limmu and Colombia El Indio pairing is the current version.

They've spent those 16 years building direct relationships with producers and focusing on sourcing coffees they find genuinely interesting rather than filling a standard lineup. Their approach leans toward letting the origin do the talking, with roasting dialed to highlight what's already in the bean rather than push it in a new direction.
