About the Coffee

Hideaway blends two origins: Ethiopia Limmu and Brazil Santa Lucia. The Limmu region sits in southwestern Ethiopia, one of the country's older established coffee-growing zones, where washed processing (removing the fruit before drying) produces a cleaner, more uniform cup. Santa Lucia is a Brazilian farm where coffee cherries are dried whole using the natural process, which adds body and sweetness to the final blend.

The two processing methods do different things to the bean. Washed coffees from Ethiopia tend to be consistent and structured. Natural-processed coffees from Brazil tend to be heavier and rounder. Combining them gives Hideaway its full body and low acidity, which is part of why it works well across so many brewing methods, from a French press at home to espresso drinks.

Rosso labels this coffee as ethically sourced and sustainably harvested, and roasts it daily in Calgary. It's a dark roast, so the beans are taken further through the roasting process, which pulls back acidity and pushes up richness and body.
