Spilt Milk started as a café in Revelstoke, BC, shaped by Australian café culture, which tends to prioritize approachable, well-made espresso-based drinks over more niche or experimental coffee. After years of working in hospitality, the team decided to start roasting their own coffee rather than sourcing it from elsewhere. Roasting in-house gave them more control over consistency and quality across both the café and their retail offering.

Their coffee is split into two ranges. The Everyday range, which this blend belongs to, is built for reliability. The Premium range is where they work with more expressive, seasonal coffees. It's a practical way of thinking about coffee, and it reflects how most people actually drink it.
