About the Coffee

Lenin Flores runs Finca El Morito in the San Ignacio area of Cajamarca, Peru, alongside his father David. The farm spans 150 hectares and works with over 50 coffee-producing families in the surrounding area. Cajamarca sits in northern Peru, where farms typically sit between 1,500 and 2,000 meters, and the region has built a quiet reputation for clean, well-processed washed coffees.

At Finca El Morito, compost is used in place of synthetic fertilizer, and the Flores family puts particular attention into post-harvest processing. This coffee is a Yellow Caturra, a variety known for producing tight, consistent fruit that responds well to careful washed processing. In a washed process, the coffee cherry is fully removed before drying, which strips away most of the fruit's influence and lets the clarity of the bean itself come through.

This lot came to Spilt Milk through Common Goal Coffee, an importer that helps connect small Canadian roasters with producers like Lenin Flores. It's a relationship Spilt Milk is hoping to build on, with plans to bring more of Finca El Morito's coffees forward in future seasons.

Spilt Milk started as a café in Revelstoke, BC, built around Australian café culture and a focus on coffee that fits into everyday life. After years in hospitality, the team began roasting their own coffee to take more direct control over quality and consistency.

Their lineup splits into two directions: an Everyday range built for approachable, reliable home brewing, and a Premium range for more expressive, seasonal lots like this one from Lenin Flores. The Lenin Flores microlot sits in that Premium tier, roasted light with filter methods in mind.
