About the Coffee

The Trademark is a blend built around two lots from the Barbosa family and Deyvid Leandro, producers based in Brazil who have become some of the most decorated in the country. They won the Cup of Excellence in 2021 and 2024, and placed second in 2025. Spilt Milk sources both lots separately and blends them together after roasting.

Both coffees are naturally processed, meaning the whole cherry is dried with the fruit still intact around the bean. This method, common in Brazil's lower-humidity growing regions, tends to produce fuller body and sweeter flavour. Red Catuai is the variety, a compact hybrid developed in Brazil in the late 1940s that's known for high yields and consistent ripening.

The name has a practical origin: in 2025, Spilt Milk ran into a trademark infringement situation that forced a rebrand, and this blend was named in direct reference to that. The coffee itself predates the name change, having been a flagship offering since the café started roasting its own coffee.

Spilt Milk is a café and roaster in Revelstoke, BC. The team started as a café first, spending years in hospitality before deciding to bring roasting in-house. The move gave them more control over what they were serving, and roasting has since become a core part of how the business runs.

Their approach is shaped by Australian café culture, with a focus on coffees that are approachable and consistent rather than challenging. The Trademark sits in their Everyday range, designed to be reliable and straightforward to brew at home regardless of your setup.
