At the Chelchele station in Yirgacheffe, ripe cherries are hand-sorted and sealed in carbon fiber tanks for up to ten days of oxygen-free fermentation. Then, they're dried on raised beds to enhance the fruity flavour profile.

Farmers and seasonal workers at Worka Chelchele are supported by EDN Ethiopian Coffee, an independent group that invests in farming communities that result in better livelihoods and better coffee.
