About the Coffee
Rodrigo Alberto Pelaez runs Finca Laderas del Tapias in Neira, Caldas, in Colombia's coffee-growing heartland. The farm sits in the hills where the Andes create ideal conditions for growing coffee. Pelaez focuses on processing coffee carefully to bring out clean, consistent flavors in each lot.
This is a washed process coffee, where the fruit is removed from the beans shortly after harvest and the beans are fermented in water tanks before being dried. The washing process highlights the coffee's inherent sweetness and acidity while giving it a clean finish. Pelaez controls each step of processing on the farm, from picking only ripe cherries to monitoring fermentation times to ensure quality stays high.

David Laville and David Walsh founded Rogue Wave Coffee in 2016 after a decade of talking about making a living through coffee. They started small in Toronto, and in 2018 Ply Pasarj joined as a partner. What began as a team of 3 has grown to 12 people, each bringing different experiences from across the coffee supply chain.
Rogue Wave focuses on direct trade relationships whenever possible, working to source coffee ethically and build long-term connections with producers. They roast with attention to detail, aiming to bring out what makes each coffee distinctive rather than roasting everything the same way. The team also spends time on brewing science and technique, treating the final cup as just as important as the roasting itself.
