Luis Pedro Zalaya grows Bourbon, Caturra, and Villa Sarchi at El Bosque in Guatemala's Chimaltenango region. The coffee gets processed at his Bella Vista mill, where workers carefully wash and ferment each lot before drying. Lots stay separate for full traceability from farm to cup.
The regenerative farming Luis uses builds healthier soil, which shows up in the coffee's clean, balanced profile. The washed process highlights the natural sweetness of these varieties, developing flavors of cherry, chocolate, and citrus that stay bright without losing body.
