A perfect extraction depends on the balance between the force of the pressure, the brewing water temperature, the grind settings and the quality of the blend (in terms of freshness and variety).
The pressure gauge designed for LELIT machines tells you whether the pressure is optimal. Too little pressure indicates under-extraction (bland aroma), too much pressure indicates over-extraction (flavour too bitter, too acidic).
