About the Coffee

Night Walk is Paradigm Spark's dark roast blend, built for people who want a classic cup with a heavy body and low acidity. It's roasted on-site in Calgary and made to be consistent, the kind of coffee you can drink black every morning without thinking twice about it.

Dark roasting brings out the blend's heavier body and smoky finish while dialing back acidity, landing at a 2 out of 10 on that scale. Sweetness sits higher, at 7 out of 10, which balances the roast's bitterness so it doesn't come across one-note. It's a blend built for familiarity rather than novelty, a profile the roaster describes as loved by coffee drinkers for a long time.

About Paradigm Spark

David Kim opened Paradigm Spark in Calgary after seven years roasting coffee at Phil & Sebastian. He left to start his own roasting company, David Kim Coffee, and ran pop-ups out of Eight Ounce Coffee's space before deciding it was time for his own location.

Kim is an award-winning barista with multiple placements at Canadian National Barista Championships. At Paradigm Spark, coffee and espresso drinks are made with beans roasted on-site, alongside sandwiches and house-made baked goods.
