About the Coffee
Inácio Urban founded Fazenda Rio Brilhante in the 1980s in the Pântano micro-region of Minas Gerais. The farm has grown to 1,600 hectares and now produces an average of 130,000 bags a year, run today by the second generation of the Urban family. Trees sit at 950-1050 meters, planted with Catuai, Bourbon, and Guara varieties.
The farm uses mechanical harvesting and density sorting to keep lots consistent, and plants mahogany and grevillea trees around the coffee to block wind and support local biodiversity. Rio Brilhante holds UTZ and Rainforest Alliance certifications and keeps mandatory forest reserves as part of its farming plan. This lot is a natural process, meaning the cherries dry whole before the fruit is removed, and was sourced through Falcon Coffees.
About Hatch
Hatch traces back to its founder roasting coffee by hand while living in West Africa. That led to a roastery and brewery build in Markham, Ontario, where the team started with cold brew before moving into roasting.
Hatch runs its roasting on a Loring 70kg (added in 2022) alongside a Loring 35kg from 2015 and a Stronghold S9X, and cans its own cold brew in-house with a Twin Monkeys Roaring Fork line. The team was named Th3rd Wave Coffee Roaster of the Year in 2022 and won Best Cafe outside the GTA in 2020.
