Zapotec farmers in Santo Domingo Cacalotepec grow Typica and Bourbon at high elevations, handpicking ripe cherries and processing them the same day. After pulping and fermentation, the coffee dries naturally while the pulp returns to the fields as compost.
These heirloom varieties yield less than modern hybrids, but the slow ripening under native tree shade creates the sweet, clean flavors with notes of caramel and chocolate. The washed process highlights the natural sweetness these old varieties develop when given time to mature properly.
