This coffee has flavors of almond, panela sugar, and pear. Women in Chiapas grow Bourbon, Typica, and Mundo Novo on farms averaging 3 hectares near El Triunfo Biosphere Reserve, where coffee grows under shade trees.
The farmers process their own coffee and use filtration pits filled with gravel, sand, and charcoal to filter wastewater before it reaches the water table. They're part of Café Gourmet Sierra Azul, a co-op helping over 200 small-scale farmers access better markets. The shade-grown system and water management create the clean, sweet profile Chiapas organic coffee is known for.
One bag should yield 18 double espressos or 15 cups of filter coffee. If you find you need less or more, you can manage your subscription.
